Hi!
I'm in UK, so my choices may oscillate to those in other climates.
Our Monastery and Allotments enjoy herb gardens. Among our favorites are:
Culinary:
* Applemint and other mint varieties for flavoring potatoes, puddings and simply enjoy the fragrance rubbed between fingers. Mint can be very invasive and want to clutch over the growing area, so we other plant in containers and pots.
* Rosemary - great next to lamb or potatoes.
* Chives - delicious chopped up within mixed salads.
* Thyme, Sage, Basil - flavoring stews and stuffing
* Lemon-Grass - we like this within chicken dishes
* Oregano - great in pasta sauces or on pizzas
Healing:
* Lavender - soothing of skin, mind and emotion. It's also great to use as a midge repellent in Scotland and as a tub or foot-soak with brackish
* Cumfrey - good to sooth nettle stings and as a green compost
* Mustard - another good green nourishment and a great flavored, but also a natural anti-biotic used surrounded by hot bathing or as a poultice on boils
Of course these can be used in cooking or therapy in assorted combinations and there are plentiful more herbs newly as amazing in their own channel. You can find out much more on the Internet or by getting a good book from your local library.
